So what is a Pork Patty?
An American breakfast pork patty is simply seasoned ground pork shaped into a small, flat round and cooked in a skillet or on a griddle.
The flavor usually leans savory, peppery, and herby, with sage doing much of the heavy lifting. Some versions are a little sweet, some are more pepper-forward, and some are almost entirely about pork, salt, sage, and a few warm spices.
What makes it different from many European sausages is the format. There is no casing. You mix the seasoning directly into the ground pork, form the meat into patties, and cook them like small burgers. The result is browned and crisp around the edges, juicy in the middle, and built to sit beside eggs, go inside a biscuit, or get crumbled into sausage gravy.

The American breakfast pork patty is one of those foods that barely needs explaining in the United States. You’ll find it next to eggs and pancakes, stuffed into biscuits, crumbled into sausage gravy, and served everywhere from roadside diners to somebody’s kitchen on a Saturday morning.
In much of Europe, there really isn’t a close everyday equivalent.
And Americans eat a lot of these things.
According to Waffle House, the chain serves about 110 sausage patties every minute across its restaurants. That’s one chain. It doesn’t count IHOP, Cracker Barrel, fast-food breakfast, independent diners, hotels, truck stops, or what people are cooking at home.
The grocery-store numbers are just as telling. According to 2025 Nielsen data cited by the National Hot Dog and Sausage Council (Yes, the US has a National Hot Dog and Sausage Council), Americans bought more than 418 million pounds of breakfast sausage at retail. That works out to the equivalent of roughly 13 million 1.5-ounce patties every day.
Not all of that sausage is sold as patties, of course. Some of it is links or bulk sausage.
Still.
That is a whole lot of breakfast sausage.
These patties are not some obscure American curiosity. They are part of everyday American food culture.
And once you’ve had one, you start to understand why.
